Ingredients
- Chicken breasts
- 2 cups flour
- 1 large onion
- Stick of butter
- 3 tbsp hot curry powder
- Salt
- Pepper
- 2 cups chicken broth
- Jar of Major Grey's mango chutney
- Bag of coconut flakes
- Bag of fresh parsley
- Bag of Almond slices
Directions
- Boil chicken until cooked. Cut chicken into cubes and set aside. Start cooking rice.
- Place 2 cups of flour in skillet on medium, stirring until toasty brown.
- Add 1 large chopped onion and 2 tbsp butter, stirring slowly. Add 1-2 cups of chicken broth to make 'gravy.' Add 2-3 tbsp hot curry powder and a touch of salt & pepper.
- Add chicken to gravy and simmer for 30 minutes.
- It will thicken as it's cooked. Add broth if too thick.
- Serve over rice and add toppings: coconut flakes, parsley, almond slices, and mango chutney.
