Mom's Chicken Curry

Ingredients
  • Chicken breasts
  • 2 cups flour
  • 1 large onion
  • Stick of butter
  • 3 tbsp hot curry powder
  • Salt
  • Pepper
  • 2 cups chicken broth
  • Jar of Major Grey's mango chutney
  • Bag of coconut flakes
  • Bag of fresh parsley
  • Bag of Almond slices

Directions
  1. Boil chicken until cooked. Cut chicken into cubes and set aside. Start cooking rice.
  2. Place 2 cups of flour in skillet on medium, stirring until toasty brown.
  3. Add 1 large chopped onion and 2 tbsp butter, stirring slowly. Add 1-2 cups of chicken broth to make 'gravy.' Add 2-3 tbsp hot curry powder and a touch of salt & pepper.
  4. Add chicken to gravy and simmer for 30 minutes.
  5. It will thicken as it's cooked. Add broth if too thick.
  6. Serve over rice and add toppings: coconut flakes, parsley, almond slices, and mango chutney.
