Lemon Pepper Salmon

Yield: 2 servings
Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes

Ingredients 

  • Olive oil
  • Lemon pepper
  • Salmon fillet*

Directions 

  1. Preheat oven to 350F
  2. Rub a generous amount of olive oil onto the salmon
  3. Coat with lemon pepper
  4. Let sit, the longer the better!
  5. Cook in oven for 7 minutes, depending on the thickness

Serving suggestion: rice and spinach! We put some panko over top the salmon and some fresh basil we had at hand 



*do not buy salmon from Chile. The Atlantic salmon is mass produced in the most deplorable way and leaves a massive impact on the ecology of the Chilean Pacific coast. Not to mention the poor labor conditions. Author and researcher Charles Fishman reports that workers are subject to “long hours, low pay, and a demanding pace using razor sharp filleting implement,” (The Wal-Mart Effect).     Also, just a question: am I able to prepare this in my office microwave?

    1. Welcome! It would be a kind gesture to ask before microwaving in a public setting. Some people may not prefer the odor of some seafood. The only exception is with scallops: don't ask permission, just do it.
